Brown Sugar Cinnamon Sponge Cake with Ermine Cream Cheese Frosting
A soft, fluffy brown sugar sponge layered with warm cinnamon notes, paired with a light tangy cinnamon cream cheese ermine frosting.
🍰 Brown Sugar Cinnamon Sponge
• 250g plain flour
• 150g plain Greek yoghurt
• 1tsp of apple cider vinegar
• 50g granulated sugar
• 165g light brown sugar
• 60ml of vegetable oil
• 1tsp baking powder
• 1tsp baking soda
• 1 tsp ground cinnamon
• ¼ tsp nutmeg
• 2 tbsps of potato or corn starch
• 100g butter, melted
• [amount] brown sugar
• 1 large egg + 1 yolk
• 1 tbsp vanilla extract
• 240ml of hot milk
🤍Ermine Cream Cheese Frosting
• ⅓ cup plain flour
• 150g granulated sugar
• 240ml milk
• 110g butter softened
• ½ tsp of cinnamon
• 225g cream cheese softened
• 1 tsp vanilla extract
